2015 Mayor's Vineyard Shiraz
Planted by a former Mayor of Adelaide in 1969, The Mayor’s Vineyard is perched on the eastern ridge of the Clare Valley at a cool 500m altitude. The vineyard’s red loam soils are dotted with slate and have long produced savoury Shiraz wines of impeccable elegance. A compelling nose of ripe red fruits, baking spices and graphite is supported by an aromatic, char-like lift. Waves of red & purple fruits on the palate display purity & depth of flavour supported by sweeping sheets of fine, ripe tannins.
The wine was made with a responsive winemaking approach to preserve fruit purity. Fermented by ambient yeast in 1 Ton open fermenters. Extraction of flavour and texture was achieved only via hand plunging with frequency determined through regular tasting. Individual block ferments were kept separate and were left on skins for between 21 and 29 days. The individual parcels were then basket pressed and transferred to selected Burgundy coopered puncheons for 13 months. Blending occurred in March 16 and bottling in June.
