2016 Enterprise Vineyard Cabernet Sauvignon
A fragrant nose of violets, layered spice, red fruits and tapenade. The scent is carried across the palate with fine detail and elegant poise. A classic Enterprise Cabernet in its typical medium bodied style that will continue to develop. Knappstein’s single vineyard wines explore the full potential and individual nuances of our single vineyard sites, producing wines of finesse and raw beauty.
The palate is bright and structured while retaining an incredible depth of black berried fruit flavours. Fine-grained tannins spread evenly across a generous palate and carry flavours of red cherry and cassis though to a well-composed finish
The wine was made with a responsive winemaking approach to preserve fruit purity. The wines are made with as little handling as possible allowing the fruit to show through. Simple fermentation in Potter (static) and open fermenters were achieved with gentle extraction of flavours through pumping over once a day and hand plunging. Ferment lasts around 14-18 days. Skins are then pressed and wines allowed to settle before being transferred to French oak barrel.
